♻️ Leftover cooking: give your leftovers a second life

Stale bread, rice, roast chicken, stew, limp vegetables or overripe fruit: ideas so nothing goes to waste, how long each thing keeps and how to freeze without nasty surprises.

In almost every home, perfectly good food ends up in the bin: half a loaf, a forgotten tub of rice, that banana covered in spots… Our grandmothers had it crystal clear: leftovers aren't a problem, they're the start of another recipe. Croquettes, French toast and cannelloni were born exactly that way. Here are the basic rules and a few ideas so nothing slips through the cracks.

✅ The golden rules (for using leftovers safely)

  • Cool it fast: don't leave cooked food at room temperature for more than 2 hours. Split it into small, shallow containers so it cools sooner, and put it in the fridge.
  • Three or four days: that's how long almost any cooked dish keeps in the fridge. If you won't eat it in that time, freeze it from day one.
  • Reheat thoroughly: until it's steaming hot all the way through, not just around the edge. And reheat only the portion you're going to eat, just once.
  • Label it: a strip of masking tape with the name and date saves you guessing games a month later.

Important: cooked rice is the trickiest. Cool it straight away, keep it in the fridge and eat it within a day or two, piping hot.

🍳 Ideas for every leftover

Stale bread

The king of leftovers. Sliced, for French toast («torrijas») or toasted and rubbed with tomato and olive oil; diced, as croutons for soup; crumbled, for Spanish «migas» or a cold «salmorejo»; and grated, as homemade breadcrumbs for coatings and meatballs.

Plain rice

Fried rice actually turns out better with yesterday's rice: loose and cold, in a very hot pan with egg, peas, ham or whatever you have. It's also good for stuffing peppers or making cheesy rice cakes.

Roast chicken

Shredded, it's gold: croquettes, cannelloni, quesadillas, a salad with whatever's in the fridge or a filling for pasties. And with the bones and carcass, a homemade stock that's worth a whole other meal.

Stews and boiled meats

Spanish «ropa vieja» made with the meat from a «cocido», classic croquettes and, in Catalonia, Saint Stephen's cannelloni, made precisely with the meat from the Christmas «escudella». With the leftover broth, a noodle soup the next day.

Slightly limp vegetables

Soft carrots, half a courgette, a sad-looking leek… Into the pot with a little potato for a vegetable soup, or sautéed for an omelette or a quiche. If you don't have time, chop and freeze them for your next «sofrito».

Overripe fruit

Spotty bananas are the best for banana bread. Any other ripe fruit goes into smoothies or compote, or frozen in chunks, ready for a smoothie or a quick ice cream.

❄️ The freezer, your best friend

  • Single portions: freeze in one-meal portions, so you only thaw what you'll use.
  • What freezes best: stews, soups, stocks, tomato sauces, croquettes (before frying) and sliced bread, which you can toast straight from frozen.
  • What isn't worth it: whole boiled potatoes (they turn mealy), lettuce and other raw salad vegetables, and mayonnaise-type sauces.
  • Thaw in the fridge: slowly, overnight, never on the worktop.
  • Don't refreeze raw food that has been thawed; if you cook it first, you can freeze the resulting dish.
  • Rough guide: most cooked dishes keep well for two or three months.

🧊 A tidy fridge wastes less

The restaurant trick works just as well at home: first in, first out. Put what expires soonest and yesterday's leftovers at the front where you can see them, and new things at the back. Use clear containers (out of sight, out of mind) and set aside one day a week, say Thursday, for a «leftovers dinner» with whatever's left.

The best leftover recipe is the one you don't need: plan the week's menu, buy just enough, and leftovers become a gift, not a problem.

Tip: on the site you can plan your weekly menu and send all the ingredients to your shopping list with one click. You buy what you need and nothing more.

Do you have a family leftover recipe? Upload it: the best ones are usually those that were never written down anywhere.
