Ingredients
- 2 long pieces of peppered sausage
- 1 can of white beans
- 1 peeled garlic clove
- Fresh parsley
- 3 or 4 eggs
- Olive oil
- Salt
Instructions
- We cut the sausage into pieces and cook it in a pan with olive oil.
- Add the beans, chopped garlic and chopped parsley, let everything cook for about 7-8 minutes over medium/high heat and add salt to taste.
- Once the mixture is cooked and golden brown, add the 3 or 4 beaten eggs to the pan, mix, and let the bottom cook. When the bottom is cooked and the cooked egg is starting to show through the other ingredients, place a plate over the pan, flip the omelet, and return it to the same pan. Let the other side cook for another 5 to 7 minutes.
- Once the other part of the tortilla is cooked, put a plate back in the pan, remove the cooked tortilla and plate to taste.
